chayote - up close and personal

I saw this guy at Whole Foods on our weekly trip. According to Wikipedia the chayote is an edible gourd, native to Mexico. I couldn’t resist its scrunchy little face so I brought it home. The flesh reminded me of an unripe pear in its firmness. We sliced it and sauteed it with rainbow chard, garlic, and pine nuts. I can’t say that it had much taste, but at least it didn’t offend.
